Week 1 Done

Well. The first week of my Junior year is now over. I can tell that this is going to be an amazing year and I am SO excited to be moving forward with Speech Language Pathology. I know, now more than ever, that I am supposed to be doing SLP. I never thought I would say this, but I love to learn and just soak it all in. STATS is the one class that I know will be a struggle for me, not because it is hard, but because it is the only class that is not one of my major classes.

I can't wait to be done with school so that I can be a speech therapist! I can't believe I will be able to call myself a therapist! How cool is that?!?! I am just loving life right now!! :)


A good friend of mine gave me this huge Zucchini... so I made bread, and I found the best recipe ever! It is so moist and just great! If you have zucchini you should try this delicious recipe!
Ingredients:

3 cup all-purpose flour
1/2 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 teaspoon baking soda
3 eggs
2 cup white sugar
1 cup vegetable oil
2 teaspoon vanilla extract
2 cup grated zucchini
1 cup chopped pecans
1 cup semisweet chocolate chips
1 tablespoon orange zest
whipped cream, for serving
zucchini ribbons, for serving
Directions

Preheat oven at 350 degrees F. Grease (2) 9 by 5-inch loaf pans.

Sift together flour, baking powder, salt, spices and baking soda.

In a large bowl, beat eggs until light and fluffy. Add sugar, and continue beating until well blended. Stir in oil, vanilla, zucchini, pecans, chocolate chips, and orange zest. Stir in sifted ingredients. Pour into prepared loaf pans.

Bake for 50 minutes, or until a skewer inserted in the middle comes out clean. Remove loaves from pans and cool. Chill before slicing. Serve with whipped cream and ribbons of zucchini.

Prep time - 15 minutes
Cook Time - 50 minutes
Yield - 2 loaves
Difficulty - Easy


I am ALSO very excited for Blaine and Erica to be having a little boy! I just know that they are going to be amazing parents! I love you all and I can't wait to come home!

Keep up the good work. You are doing an amazing job. Keep the savior first and foremost and everything will go ok. I'm not saying there won't be trials but you will have the faith to get through them. have fun on your date with dennis. love ya
