Week 1 Done

Well. The first week of my Junior year is now over. I can tell that this is going to be an amazing year and I am SO excited to be moving forward with Speech Language Pathology. I know, now more than ever, that I am supposed to be doing SLP. I never thought I would say this, but I love to learn and just soak it all in. STATS is the one class that I know will be a struggle for me, not because it is hard, but because it is the only class that is not one of my major classes.

I can't wait to be done with school so that I can be a speech therapist! I can't believe I will be able to call myself a therapist! How cool is that?!?! I am just loving life right now!! :)


A good friend of mine gave me this huge Zucchini... so I made bread, and I found the best recipe ever! It is so moist and just great! If you have zucchini you should try this delicious recipe!
Ingredients:

3 cup all-purpose flour
1/2 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 teaspoon baking soda
3 eggs
2 cup white sugar
1 cup vegetable oil
2 teaspoon vanilla extract
2 cup grated zucchini
1 cup chopped pecans
1 cup semisweet chocolate chips
1 tablespoon orange zest
whipped cream, for serving
zucchini ribbons, for serving
Directions

Preheat oven at 350 degrees F. Grease (2) 9 by 5-inch loaf pans.

Sift together flour, baking powder, salt, spices and baking soda.

In a large bowl, beat eggs until light and fluffy. Add sugar, and continue beating until well blended. Stir in oil, vanilla, zucchini, pecans, chocolate chips, and orange zest. Stir in sifted ingredients. Pour into prepared loaf pans.

Bake for 50 minutes, or until a skewer inserted in the middle comes out clean. Remove loaves from pans and cool. Chill before slicing. Serve with whipped cream and ribbons of zucchini.

Prep time - 15 minutes
Cook Time - 50 minutes
Yield - 2 loaves
Difficulty - Easy


I am ALSO very excited for Blaine and Erica to be having a little boy! I just know that they are going to be amazing parents! I love you all and I can't wait to come home!

School Days and such...

Well. The summer is officially over...not that I really had a summer, but classes start tomorrow! I am pretty excited for this semester! I am starting my junior year, so I am in classes that I actually care about and classes that I will use from now on! I never thought I would say that I was excited for school... but I am. :) I do wish I would have had more of a summer... but I am so grateful to be done with anatomy!
Also, I have a new job. I am still going to be working at the house that I have been working at, but for like 5 to 10 hours a week. My new job is working at Farm Bureau Insurance, and I will work there every day form 3 to 7. I am pretty excited about it! I will have time to study and have a little bit of a social life!
That is pretty much it in my life right now....

Elephant

Well, Rachel and Tyler have taught Kitt to say various animal songs... my VERY favorite is when he does elephant. :) I got it on video and I wanted to share! :) Right before I started to record he was asked to do a cat, i think, and his response was mommy. Love this little guy! video

Surprise!

I was able to surprise my mom this weekend, I left Logan at like 430 am on Friday and I left Colorado today at 1030 am. It was SO much fun to be home and spend time with my family. Kitt, my nephew, is getting bigger and is so much fun. We were able to go to a ward picnic and a fun hike after. Mostly I just love to spend time with my family. I love Logan and USU, but there is just something about being home, and seeing family all the time. I seem to get homesick super easy!










Before I was able to get to see Joy and Jocelyn. Jocelyn is also soooooo cute. I wish I could see them more! Kids are so cute and I miss getting to see them all the time... gotta love the life of a college student. Anyways, I love life and I am soo glad I was able to go home before the semester starts on August 24th. Love you all!
